Best Darn Spinach Dip Ever

As a vegan, I miss appetizers! I especially miss bar food like cheesy spinach dip. So, I set out to re-create a vegan friendly cheesy spinach dip better than "Da Dip" by Freak Nasty.

Tips About Spinach Dip

The best way to start re-creating any vegan version of a dish not traditionally vegan is to get acquainted with the traditional ingredients. Spinach Artichoke Dip is a mixture of lightly cooked spinach and artichokes, mixed with melted cheese, garlic, sour cream, cream cheese, and seasonings.

Additionally, you always want to think about the consistency you want your food to have when you start swapping our ingredients. The instructions I'll lay out here will give you a, cheesy, warm dip with a thick consistency. It will be imperative that you are careful not to over-cook the spinach and artichoke hearts. As vegetables, they hold water and will make the dip mushy if over-cooked. A runny dip isn't fun for anyone.


Ingredients:

  • Two Cups of freshly washed baby Spinach leaves

  • Dairy Free Unsweetened Vanilla Yogurt

  • Dairy Free Parmesan Cheese (Recommended Brand: Follow Your Heart)

  • Dairy Free Mozzarella (Recommended Brand: Myioko's Creamery Wheel)

  • Dairy Free Cream Cheese (Recommended Brand: Voila)

  • Dairy Free Pepper Jack Cheese (Recommended Brand: Myioko's)

  • Spices: Garlic Powder, Nutmeg, Smoked Paprika, Fresh Sage, Fresh Thyme, Fresh Cilantro, Basil


Instructions

1. In a sauce pan, sauté drained artichoke hearts and spinach for 3-5 mins.

a. Season spinach and artichokes with the seasonings listed above.

2. Set the gently sautéed spinach and artichokes to the side.

3. In a small casserole dish, mix the following:

a. 1/4 cup of unsweetened vanilla yogurt

b. 1/4 cup of non-dairy cream cheese

c. 1/4 cup of non-dairy mozzarella

d. 1/4 cup of non-dairy pepper jack

e. 2/4 cup of non-dairy parmesan

4. Gradually mix in the sautéed spinach and artichokes in the casserole dish.

5. Top the mixture with a sprinkle of pepper jack and place in the oven for 20 mins on 400 degrees(f)

6. Remove from the oven and cool until safe to enjoy.

7. DIP Baby DIP!
